
It’s the wine of the Valdobbiadene wine-making tradition. Each vine grower reserves it for himself and his friends. The second fermentation in the bottle turns, with the slowness of the good times and rhythm of the seasons, the sugars into alcohol and carbon dioxide resulting in an anarchist perlage and a riotous foam, settling at the bottom of the bottle crystalline residues of exhausted yeasts (hence the name “Col Fondo”, i.e.”With Dregs”).

MATCHINGS
Tradition holds that it is the main wine for peasant hospitality. A bottle, thick glasses, fresh bread from the oven, alpine cheese and a flood of chatters.

Storage : In a cool place, away from light
Serving temperature : 43-46 °F (6-8 °C)
Advised wineglass : Any glass enhancing the taste on the palate. It should be decanted very gently to avoid the turbidity caused by the residues on the bottom.
